ENSALADA ALEMANA. GERMAN SALAD


 
 

ESPAÑOL (ENGLISH UNDERNEATH)

Hoy he hecho una receta de verano para aprovechar sobras. He variado un poco la receta original porque los pepinillos, la mostaza y las alcaparras no me gustan demasiado. La verdad es que me ha quedado un plato único genial (teniendo en cuenta que era hecho de “ropa vieja”)!

RECETA

Tiempo: 30 min (si tenéis que cocer las patatas y los guisantes) más 15min de nevera

Dificultad: fácil

 

INGREDIENTES

·         4 Patatas

·         75g de guisantes

·         5 salchichas tipo Frankfurt (yo cojo las que parecen auténticas en lugar de las de las grandes marcas comerciales)

·         La carne de un tomate pelado cortado a dados pequeños

·         Olivas al gusto (recomiendo que sean sin hueso. Yo puse  de las que llevan hueso y era incómodo de comer)

·         1 cebolla dulce picada (en mi caso he usado la variedad de Figueres)

·         4 ramas de cebollino picado

·         Mayonesa

·         Para decorar: una loncha de pavo y unas láminas finas de queso y vinagre balsámico de Módena.

PASOS

Yo ya tenía las patatas y los guisantes cocidos previamente. Si tenéis que empezar desde cero, recomiendo cocerlos al vapor junto a las salchichas.

Mientras, en un bol grande, ponemos la cebolla picada y el tomate a dados (escurrid antes el jugo para que no agüe la ensalada) con las olivas, el cebollino la mayonesa (cantidad al gusto). Cuando tengáis las patatas (cortadlas a trocitos), los guisantes y las salchichas cocidas, agregadlos a la mezcla. Removed bien y al frigo durante 15 minutos y ¡listo!

This is a summer recipe to waste resting food after cooking. I’ve changed a little bit the original recipe as I don’t like gherkins, mustard and capers. The truth is that the output is a great single course.

RECIPE

Servings: 4

Time: 30 min (if you need to cook potatoes and peas) and 15 extra minutes in the fridge

Difficulty: easy

 

INGREDIENTS

·         4 Potatoes

·         75g peas

·         5 sausages (type: Frankfurt)

·         1 ripe tomato chopped in small dices

·         Green pitted olives

·         1 sweet onion (chopped)

·         4 herbs of chive

·         Mayonnaise

·         To decorate: a slice of cold meat (turkey in my case) and some thin slices of cheese and balsamic Modena vinegar.

STEPS

When I prepared this salad, I already had the potatoes and the peas cooked. If you need to cook them, I suggest preparing them steamed with the sausages as well.

Meanwhile, in a big bowl, put the onion and the tomato (drain everything carefully as the water of the vegetables could spoil the mayonnaise) with the olives, the chive and the mayonnaise. When the potatoes, the peas and the sausages are ready, add them to the mixture. Remove carefully and duly and put the bowl in the fridge for 15 minutes and it will be ready to eat!

ENSALADILLA RUSA. RUSSIAN SALAD



ESPAÑOL (ENGLISH UNDERNEATH)

Oí una vez en televisión que los norteamericanos llaman a este plato “ensaladilla rusa” y los rusos “american salad”. Desconozco qué hay de cierto o de falso en ello aunque, cuanto menos, curioso es.

RECETA

Tiempo: 20’ más 15 en el frigo

Dificultad: fácil

 

INGREDIENTES

·         Verdura congelada para ensaladilla rusa

·         1 Cebolla picada

·         4 Huevos

·         1 lata pequeña de olivas deshuesadas

·         2 latas de atún en conserva

·         6 Langostinos cocidos cortados a dados

·         Dados de queso semicurado

·         ¼ de un pimiento escalibado cortado a tiras

·         Mayonesa

·         Pimienta molida

·         Cebollino para decorar

PASOS

En un cazo con agua, ponemos a hervir la verdura. En otro más pequeño, ponemos a hervir los huevos. Mientras, cogemos un bol grande y mezclamos las olivas con el atún, el queso, la cebolla, los langostinos, el pimiento, una pizca de pimienta y la mayonesa.

Una vez listos los huevos, los pasamos por agua fría, los pelamos, cortamos a dados y los echamos a la mezcla. Paramos el fuego y pasamos la verdura por agua fría y dejamos escurrir. La añadimos a la mezcla y lo removemos todo con una cuchara. Metemos el bol en la nevera y dejamos enfriar.

A la hora de servir, usamos un aro redondo para que nos quede bien presentado. Para decorar le ponemos una ramita de cebollino partida por la mitad.

What I heard on TV once was that North-American people called this dish “Russian salad”, whereas Russians called it “American Salad”. I don’t know if this is 100% true but it sound, at least, quite funny!

RECIPE

Servings: 4

Time: 20’ and 15’ extra in the fridge

Difficulty: easy

 

INGREDIENTS

·         Frozen Russian Salad assorted vegetables

·         1 chopped onion

·         4 eggs

·         1 small can of Green pitted olives

·         2 tuna cans

·         6 boiled and chopped prawns

·         Dices of semi-mature cheese

·         ¼ of an smoked grilled bell pepper (pimiento escalibado) cut into strips

·         Mayonnaise

·         Black pepper

·         Chive to decorate

STEPS

In a pot with water, boil the vegetables. In a smaller pot, boil the eggs. Meanwhile, take a big bowl and mix the olives with tuna, cheese, onion, prawns, bell pepper, a pinch of black pepper and mayonnaise.

Once the eggs are ready, cool them, peel them and chop them. Add the eggs to the mixture as well. Turn off the heat and wash with cold water the vegetables. Let them drain. Add the vegetables to the mixture too and stir with a spoon. Put the bowl in the fridge for 15 minutes.

When plating up, use cooking ring. As decoration, put two herbs of chive on top.

PIÑA CON JAMÓN. PINEAPPLE WITH HAM

Éste es un típico plato de verano. Es muy muy rápido y no hay que cocinar: ideal para los días que vamos justos de tiempo.

RECETA

Tiempo: 7 minutos

Dificultad: muy fácil

INGREDIENTES

·         Piña

·         Jamón

·         Opcional: (para decorar) combina muy bien unas gotas de vinagre balsámico de Módena encima de la piña.

PASOS

Cortar 1/8 parte de piña y pelarla. Cortar la piña en triángulos. A continuación, cortar unos taquitos de jamón y disponer en un plato.

Nota: es mejor servir la piña fresquita que a temperatura ambiente.

This is a typical summer dish. It is quick to prepare and you don’t have to cook: perfect for those days that we are in a hurry!

RECIPE

Time: 7 minutes

Difficulty: very easy

INGREDIENTS

·         Pineapple

·         Ham

·         Optional: (to decorate) it tastes good served with some drops of balsamic Modena vinegar sprinkled over the pineapple.

STEPS

Cut 1/8 part of pineapple and peel it. Cut the pineapple in triangles. Next, cut some ham bits and place the pineapple and the ham in a plate.

 Advice: it is better to serve the pineapple previously cooled in the fridge than at room temperature.

CANELONES DE PESCADO.FISH CANNELLONI




ESPAÑOL (ENGLISH UNDERNEATH)

En primer lugar, disculpad la presentación del plato: corté uno de los tres canelones para que se viera bien el relleno. Plato exquisito, quizá para una ocasión especial. Yo lo hice para Navidades. Es versátil y admite muchas opciones de pescado e incluso de marisco. Si tenéis invitados, es un acierto seguro. ¡Vamos allá!

RECETA

Tiempo: 1h 30min

Dificultad: media

INGREDIENTES

·         12 láminas de canelones (de los que no hay que cocer. Podéis usar los clásicos pero recomiendo éstos porque se gana tiempo y salen todos enteros y sin pegarse entre sí)

·         1 tomate maduro rallado

·         1 cebolla

·         Unas tiras de pimiento escalivado

·         2 dientes de ajo

·         1 vasito de vino blanco

·         Pescado: langostinos (6), rape (1 cola pequeña), merluza (1 rodanchas), salmón (1 rodancha) y lubina (1 pequeña)

·         Pan rallado

·         Perejil

·         Agua

·         Aceite

·         Sal

·         Pimienta negra

·         Queso rallado para gratinar

PASOS

En primer lugar, lavamos los vegetales crudos y los picamos por separado muy finos. Reservamos.

A continuación, limpiamos y quitamos las espinas del pescado (lo dejamos “sin trabajo”) y lo salpimentamos. Echamos un buen chorro de aceite en una sartén. Sofreímos la cebolla y reservamos. En el mismo aceite, salteamos el pescado con los dos dientes de ajo. Lo ponemos en una picadora junto a las tiras de pimiento a una marcha baja (no nos interesa que nos quede demasiado desmenuzado). Mientras, ponemos los canelones a reblandecerse en agua (leemos las instrucciones concretas del paquete que compremos porque los tiempos pueden variar). Los retiramos y los dejamos tapados en un paño húmedo.

Mezclamos el pescado con la cebolla en la sartén. A continuación, añadimos el pan rallado y el perejil y sofreímos un minuto. Echamos el vino y dejamos que lo absorba a fuego rápido. Bajamos el fuego y añadimos el tomate rallado. Dejamos que el tomate se integre y dé melosidad al pescado.

Ponemos a calentar el horno. Preparamos la bechamel como se indica en el enlace. Reservamos.

Enplatado y horneado: cogemos los platos donde vayamos a servir los canelones (aptos para horno). Yo recomiendo enplatar individualmente directamente porque queda mejor presentado y es más práctico. Cogemos las láminas de los canelones y les ponemos el relleno. Enrollamos. Echamos un pequeño chorrito de aceite en el fondo del plato para que no se pegue la pasta de los canelones al plato. Colocamos tres canalones en cada plato. Echamos la bechamel por encima. Espolvoreamos el queso por encima. Salpimentamos ligeramente. Colocamos unos pequeños fragmentos de mantequilla encima del queso y gratinamos.

First of all, I would like to say that I feel sorry for the presentation of this dish: I cut one of the cannelloni to show the filling and the output was quite disastrous.

This is an exquisite dish for special occasions. I prepared it for a Christmas dinner. It is versatile and it admits plenty of fish combinations. If you have guests, it’s a success. Ok, so let’s go!

RECIPE

Servings: 4

Time: 1h 30min

Difficulty: medium

INGREDIENTS

·         12 cannelloni no-boil sheets (you can use other types of pasta but it will be more difficult and it will take more time to cook them)

·         1 ripe and grated tomato

·         1 onion

·         Some bands of smoky grilled bell pepper (pimiento escalibado)

·         2 garlic cloves

·         1 glass of medium bodied, fresh and fruity white wine

·         Fish: prawns (6), monkfish (1 small tail), hake (1 medallion), salmon (1 medallion) and bass (1 small unit)

·         Bread crumbs

·         Parsley

·         Water

·         Oil

·         Salt

·         Black pepper

·         Grated cheese to gratiné

STEPS

First, wash the vegetables and chop them very small separately. Leave them aside.

Next, wash, clean and peel the fish and pull up the fish bones (the output: fish “without work”). Season it with salt and pepper. Take a large saucepan and heat a little oil. Brown the onion and leave it aside. In the same oil, sauté all the fish after heating two crushed garlic cloves (later will be removed). Transfer the fish to a blender and add the bell pepper as well. Blend briefly. Meanwhile, put the cannelloni sheets into a big bowl with water to soften them (read the pasta instructions carefully and follow them as times between brand and brand may change). Remove them from water and place them covered with a wet cloth.

Mix fish with the onion in the saucepan. Next, add bread crumbs and parsley. Sauté for one minute. Sprinkle with white wine and allow it evaporate. Turn the heat down and add the grated tomato. Let it integrate with the mixture.

Heat the oven. Prepare the béchamel following the link above. Leave it aside.

Plating up and baking: take 4 plates to serve directly the cannelloni (make sure they are oven-resistant). I advise you to plate the cannelloni individually as you’ll be less exposed to troubles or mishaps. Take the cannelloni sheets and fill them with the mixture and roll them. At the bottom of the plate, add a little oil stream. Put three cannelloni in each plate. Cover them with béchamel and sprinkle the cheese on top. Season with salt and pepper slightly. Put little fragments of butter over the cheese and cook them au gratin.

Et voilà!

Tartaletas de crema y fruta. Mini fruit&cream tarts



ESPAÑOL (ENGLISH UNDERNEATH)

En dulce, la combinación de crema y fruta es una de las que más me gustan. Hoy os presento un pequeño pecado para golosos. ¡A ver qué os parece!

RECETA

Raciones: 24 unidades

Tiempo: 35’

Dificultad: fácil

INGREDIENTES

·         24 mini tartaletas

·         1 rodaja de piña natural

·         ½  kiwi

·         4 Nueces

·         ½  Melocotón en almíbar

·         1 plátano

·         24 arándanos rojos/negros  o 6 frambuesas/fresas


PASOS

En primer lugar, preparamos la crema tal y como se indica en el enlace anterior y se deja enfriar en el frigo. Mientras ésta se enfría, cortamos la fruta (nos tienen que salir 24 unidades):

-          Cortamos 24 triángulos pequeños de la rodaja de piña.

-          Partimos tres rodajas de kiwi. Cada rodaja la partimos a su vez en ocho triángulos.

-          Partimos las 4 nueces en seis trozos cada una.

-          Del medio melocotón, extraemos 24 tiras pequeñas.

-          Partimos 12 rodajas de plátano y las partimos por la mitad.

-          Cogemos 24 arándanos rojos (o cualquier fruta del bosque o fresas, si son demasiado grandes las partimos).

Sacamos la crema de la nevera. A continuación, rellenamos hasta arriba todas las tartaletas con la crema. Por último, colocamos la fruta tal y como se dispone en la fotografía.

One of my favourite sweet combinations is fruit with cream. Today, I present a little sin for those who are sweet-tooth. I hope you like it!

RECIPE

Servings: 24 units

Time: 35’

Difficulty: easy

INGREDIENTS

·         24 mini tarts

·         1 slice of natural pinneaple

·         ½  kiwi

·         4 Nuts

·         ½  peach in compote

·         1 banana

·         24 cranberries/blueberries  or 6 raspberries/strawberries

STEPS

First, prepare the pastry cream as in the previous link. Let the cream cool down in the fridge. Meanwhile, cut the fruit into small pieces (take into account that we need 24 units of each):

-          Cut 24 small triangles of the pinneaple slice.

-          Cut three slices of kiwi. Cut each slice in eight small triangles.

-          Cut the 4 nuts into six parts each.

-          Cut 24 small peach strips.

-          Cut 12 banana slices and then each into two.

-          Take 24 cranberries (or others).

Take the cream off the fridge. Next, fill to the top the tarts with the cream. Last, but not least, place the fruit as seen in the picture.

Sushi

 
MAKI DE SALMÓN. SALMON MAKI

Para celebrar el cumpleaños de mi pareja, le preparé un picnic romántico en un parque de ciudad. No sabía muy bien qué cocinar y pensé en algo que se comiera frío y fuese un poco más sofisticado que la típica ensalada de pasta/de arroz o los clásicos bocadillos o tortilla de patatas. Así que me decidí a preparar sushi. Al final no lo pudimos comer allí y lo comimos más tarde. Aquí os dejo como lo hice:

Receta de sushi:
- Maki de salmón
- Maki de plátano
- Nigiri de gamba

Tiempo: 1 hora
Raciones: 2
Dificultad: Media

Ingredientes y utensilios

  • wasabe
  • salsa de soja
  • 200g arroz especial para sushi
  • salmón marinado (teniendo en cuenta estas calores más vale no usar pescado crudo)
  • 6 gambas (cocidas al vapor)
  • 1 plátano
  • sésamo blanco y negro
  • 2 láminas de alga nori
  • una esterilla de bambú
  • film transparente
  • 1 vaso con agua
  • tabla de corte
  • palillos chinos

Pasos

Lavamos el arroz hasta que el agua salga transparente. Dejamos escurrir una hora. Ponemos a hervir el arroz especial para sushi, lo escurrimos y lo dejamos enfriar a temperatura ambiente.

- Maki de salmón
Cogemos la esterilla de cañas de bambú y la extendemos. Encima y, para que no se pegue, colocamos film transparente. Ponemos una lámina de alga nori con la cara brillante mirando hacia abajo. Con una cuchara, hacemos bolas de arroz y las extendemos encima de la alga hasta que quede la superficie lista e uniforme. No obstante, dejamos una tira de un cm de grosor libre en uno de los bordes para poder cerrar el maki. Cogemos un taco de salmón marinado y cortamos unas tiras de 1 cm de grosor aprox. Rellenamos el maki con tiras de salmón marinado. Cogemos los extremos de la esterilla y del plástico y empezamos a enrollar (prensando un poco) el maki por el extremo que tiene arroz (al que no le habíamos puesto lo humedecemos y cerramos el rollito).

- Maki de plátano
Se hace de la misma forma que el de salmón. Únicamente que se pone el plátano entero en lugar de tiras de salmón y que, entre la alga y el arroz le ponemos sésamo.

- Nigiri de gamba
Cocemos al vapor las gambas (también sirven langostinos). Hacemos unas bolas ovaladas de arroz con la ayuda de dos cucharas. Colocamos una gamba encima de cada bola de arroz. Para sujetar ambos, hacemos pequeñas tiras de alga nori y las colocamos horizontalmente como se ve en la primera fotografía.

Presentación y consejos: Ponemos los makis en el congelador durante 15 minutos. Cogemos un vaso alto y lo llenamos de agua. Sacamos los makis del congelador y cogemos un cuchillo grande y afilado y lo mojamos. vamos cortando makis de 2cm de ancho aproximadamente. Cada vez que vayamos a cortar una rodancha de maki, limpiaremos el cuchillo con una servilleta y lo mojaremos en agua. Comeremos el sushi con palillos en lugar de tenedor. Servimos el sushi junto a un pequeño bol con salsa de soja (a mi me justa añadirle un chorrito de limón) y con un poco de pasta wasabe encima del plato (cantidad: como un garbanzo. Es fuerte de sabor, mejor ir añadiendo poco a poco e ir probando. A la hora de comer, recomiendo untar un poco el pescado crudo del sushi (muy muy poco) con wasabe para darle sabor y el resto añadirlo a la salsa de soja (echar-probar hasta que el punto nos guste).

To celebrate my boyfriend's birthday, I prepared him a romantic picnic in a city park. At first, I didn't know exactly what to cook as I wanted something cold but pretty more sophisticated than the typical rice/pasta salad, sandwiches or potato omelet. That's why I decided to prepare sushi. Hereinafter you will find how I cooked it.

Salmon, prawn and banana sushi Recipe:

- Salmon Maki
- Banana Maki
- Prawn Nigiri

Servings: 2
Time: 1 hour
Difficulty: medium

Ingredients and tools

  • wasabe paste
  • soya sauce
  • 200g special sushi rice
  • marinated salmon (in summer, don't use raw fish for a picnic!)
  • 6 prawns (boiled or steamed)
  • 1 banana
  • black and White sesame sedes
  • 2 (Nori) seaweeds layers
  • 1 bamboo sushi rolling mat (see picture 2)
  • plastic wrap
  • 1 glass of water
  • cutting board
  • chopsticks

Steps

Wash the rice until the water is clear. Let it drain for an hour. Boil the rice and let it cool down at room temperature.

- Salmon Maki
Take the rolling mat and place it on a plain surface. Put plastic wrap on it. Place a Nori seaweed layer on it (make sure that the shining face is placed face down. Using a spoon, make some rice balls and put them on the seaweed layer, leaving an edge of 1cm across free of rice (to stick it to the other edge and close the roll). Spread the rice uniformely until it is plain. Take the marinated salmon and cut some strips of 1cm width. Fill the maki with marinated salmon strips. Take both sides of the rolling mat and of the plastic wrap and start rolling applying some pressure to compact the rice. Start rolling with the edge that has rice. Wet the free-rice edge and stick it to the other one.



- Banana Maki
Prepare this maki in the same way as the Salmon Maki. It only differs in the fact that you have to place the entire banana instead of salmon strips and that, between the Nori seaweed and the rice, you have to spread sesame seeds.

- Prawn Nigiri
Steam the prawns (or crayfishs). Take some rice and prepare oval spheres with the help of two spoons. Place a prawn on each rice oval sphere. To tie them, cut some Nori seaweed strips and place them horizontally as in picture one.

Plating up and advices: Put the makis in the freezer for 15 minutes. Take a long glass and fill it with water. Take the makis off the freezer. Take a big and cutting knife and wet it. Cut 2cm maki loafs. Clean the knife with a serviette every time you cut a loaf and then wet the knife to cut again. Use chopsticks instead of fork. Serve the sushi together with a small bowl of soya sauce (I also add a small stream of lemon juice). Add a small amount of wasabe paste (size: as a chickpea) on the sushi dish. Wasabe tastes quite strongly, that's why it's better to add it progressively and tasting it. When eating, I strongly suggest (with the help of japanese sticks) to spread a really small amount of wasabe paste over the raw fish. Add the resting paste to the soya sauce until you like the flavour.
