BAILA SALVAJE AL HORNO CON CRUJIENTE Y ACEITE DE CÍTRICOS  Y CONFIT EN TIMBAL DE PATATA, PIMIENTOS Y CEBOLLA AL PEDRO XIMÉNEZ.

ESPAÑOL (ENGLISH UNDERNEATH)
En verano, cuando estoy de vacaciones, tengo por hobby ir a pescar con mi padre. Este año el mar ha estado movidito y como dice el refrán “a río –en este caso, mar- revuelto, ¡ganancia de pescadores!”. La verdad es que para unos aficionados como nosotros, hemos tenido la mejor temporada de pesca de nuestra vida. En una de nuestras pesquisas, mi padre pilló una baila de 35cm.
 
 

La baila es un pescado de calidad. Es la prima-hermana de la lubina. De hecho, en muchas lenguas denominan a este pez  “lubina moteada”. Estéticamente, es casi idéntico a la lubina. Morfológicamente, lo es.  Lo diferenciamos, precisamente, por los puntitos en la parte superior. Es muy voraz y de ataque. A parte de ser apreciado en la mesa, lo es también en pesca. Pues dada su personalidad, es un pez peleoncete y ese rock’n’roll es lo que lo hace interesante para la pesca deportiva.

BAILA. TÉCNICA DE PESCA

 Se pesca a poca profundidad y cerca de la orilla (donde se acerca a comer) hay que buscarlo en fondos arenosos-rocosos y al igual que la lubina, en mar agitado, allí donde se hace espuma, remolinos de agua o incluso burbujas. Aprovecha estos entornos para atacar cuando sus víctimas son vulnerables y están despistadas. Es bastante selecto con lo que ingiere. Para engañar a este pez se puede usar lombriz, marisco, langostino, calamar o incluso rapala. Nosotros usamos un anzuelo del número 2 con guisquilla a surfcasting. Cuando pica, dobla bastante la caña. Es bueno no precipitarse en recoger el sedal y dejar que se le clave bien el anzuelo. Una vez recojamos, hay que mirar de cansar un poco al pez para que no se nos roce el hilo e ir con mucho cuidado al sacarlo del rompeolas (sobre todo si el mar está agitado). Debido a la resistencia que ofrece, recomiendo recoger el sedal de lado (en lugar de hacerlo de frente) subiendo y bajando la caña en función de lo que el pez nos vaya exigiendo, batallando con él. Para que la carne tenga un sabor óptimo, es importante cómo muere el animal: hay que mirar de causarle el menor estrés y daño posible. Además, antes miraremos cuanto mide y si no llega a su talla mínima –en el litoral andaluz es de 18 cm- lo devolveremos immediatamente al mar.

RECETA

Raciones: 2

Tiempo: 1 hora

Dificultad: media

 

INGREDIENTES

·         1 baila salvaje/no salvaje -Dicentrarchus punctatus- (o cualquier otro pescado similar: lubina -Dicentrarchus labrax-, corvina - Argyrosomus regius-, corvallo -Sciaena umbra-, verrugato-Umbrina cirrosa-…)

·         1 rebanada de pan de molde cortada al través –tramezzino-(rectangular en lugar de cuadrada) sin corteza

·         Aceite de oliva virgen extra

·         Ralladura de un limón y de una lima

·         Sal

·         Pimienta

·         Ajo

·         Perejil

·         1 patata

·         ¼  pimimento rojo

·         ½  pimiento verde

·         Cebolla dulce (yo he usado la variedad de Figueres)

·         Vino Pedro Ximénez dejado reducir a fuego lento (hasta conseguir textura de sirope)

PASOS

Pescado: Descatamos el pescado, cortamos las aletas y la cola, le sacamos las vísceras y lo limpiamos a fondo. Ponemos a calentar el horno a 200º. Le introducimos ajo y perejil en el buche y salpimentamos. Por último, echamos un chorro de aceite en un recipiente apto para horno y colocamos el pescado. Lo ponemos en el horno durante 20 minutos a 180º. Así es como queda una vez listo:

 
 
Aceite de cítricos con refrito de ajo y perejil: en un cazo ponemos aceite de oliva (en cantidad. Si sobra no pasa nada. Se puede reutilizar) sal y ajo a freír. Cuando el ajo esté doradito, se añade la ralladura de limón y de lima. Se deja aromatizar el aceite en caliente. Retiramos del fuego y colamos. Reservamos mini láminas de ajo y perejil picado en crudo hasta el momento de servir.
Timbal de confit de patata, pimientos y cebolla caramelizada: en primer lugar, cortamos la cebolla en juliana fina y la ponemos a caramelizar a fuego lento. Cuando la tengamos a punto, la retiramos y reservamos. Freímos los pimientos a fuego lento y al final los dejamos reducir en un poco de Pedro Ximénez. Reservamos. Confitamos las patatas a láminas finas, a fuego lento y con un buen grosor de aceite removiendo lo justo para no romperlas. Retiramos, escurrimos el aceite y las introducimos en una sartén con Pedro Ximénez para que empapen un poco de sabor. Retiramos y reservamos.
Crujiente: cogemos una rebanada de pan de molde y la cortamos en dos mitades a lo largo (tendremos dos tiras largas de pan de molde). Usaremos una mitad. Cogemos un aro-molde de acero inoxidable e introducimos el pan en él y lo tostamos en el horno. Retiramos, partimos por la mitad y reservamos.
Emplatado: dividimos la lubina en dos partes y emplatamos. Colocamos medio aro de pan crujiente como se ve en la fotografía inicial. Espolvoreamos ajo y perejil picado por encima del pan y del pescado. Calentamos el aceite de cítricos y con una cuchara echamos aceite por encima. Por otro lado, hacemos un timbal colocando láminas de patata en el fondo, después un pellizco de cebolla, de nuevo patata, a continuación pimientos y por último cebolla de nuevo. Echamos un chorro de reducción de Pedro Ximénez por encima del timbal et voilà: ¡c’est fini!

During summer holidays, I usually go fishing with my dad. This year, the sea was rough and it is well known that “fishermen make their day in troubled waters. The truth is that we have had the best fishing season ever. One night, my father caught a 14-inch spotted seabass.

 
 

The European spotted seabass is an appreciated fish in gastronomy. It is similar to the common seabass. This voracious fish has the same shape as the common one but it presents spots in the upper part of its body. Game fishing appreciates the spotted seabass as it strikes aggressively.
 
Hereinafter you’ll find how I prepared it!

RECIPE

Servings: 2

INGREDIENTS

·         1 (non-)wild spotted seabass -Dicentrarchus punctatus- (or any other similiar fish as: common seabass -Dicentrarchus labrax-, meagre - Argyrosomus regius -, brown meagre -Sciaena umbra-, shi drum -Umbrina cirrosa-…)

·         1 loaf of sandwich bread cut along –tramezzino-(rectangular instead of square) with no crust

·         Extra virgin olive oil

·         The zest of 1 Lemon and 1 lime

·         Salt

·         Black pepper

·         Garlic

·         parsley

·         1 potato

·         ¼  red pepper

·         ½  Green pepper

·         1 sweet onion

·         Pedro Ximénez wine reduction

STEPS

Fish: scale the fish, cut the fins and part of the tail. Remove all the guts and clean the fish carefully. Heat the oven at 200ºC. Introduce some minced garlic and parsley inside its belly and season with salt and pepper. Pour a generous oil stream at the bottom of a heat-resistant pan and place the fish inside it. Put the pan in the oven for 20 minutes at 180º. That is how it should look like after cooking:

 
 
Citric oil with refried garlic and parsley: pour some olive oil in a pot generously. Season with salt and add garlic. Fry it. When the garlic is brown, add the zest. Let them scent in the oil. Remove the pot from heat and strain. Add parsley and garlic to the oil and fry it again. Remove from heat and leave it aside.
Potato, peppers and caramelized onion confit timbale: First, do the onion in julienne cut. Caramelize it at very low heat. When the onion is ready, add some Pedro Ximénez wine and let it reduce. Remove it from heat and leave it aside. Fry the peppers at low heat and in a generous oil amount. Add some P. Ximénez and let it reduce. Remove from fire and leave it aside. Cut the potato very thin and cook it at low heat as well, confiting them. Once they are ready, degrease them with kitchen roll paper and let them reduce in another pot with P Ximénez. Remove and leave aside.
Crunch: take a loaf of bread and cut it along into two. Use only one of these two. Take a stainless Steel kitchen ring and introduce the bread in it (it should look like a circle of bread touching the ring). Toast it a little bit (just to obtain a fix circle of brad). Cut it into two halves and leave them aside.
Plating up: cut the fish into two parts and place them into two plates. Now, put the bread as shown in the first picture. Sprinkle minced garlic and parsley over them. Heat the citric oil and with the help of a TBspoon pour some oil over them. Do a timbale setting layers of potato at the bottom, next a pinch of onion, again potato, then peppers and onion again. Add a stream of P Ximenez reduction over the timbale et voilà: c’est fini!

ENSALADA ALEMANA. GERMAN SALAD


 
 

ESPAÑOL (ENGLISH UNDERNEATH)

Hoy he hecho una receta de verano para aprovechar sobras. He variado un poco la receta original porque los pepinillos, la mostaza y las alcaparras no me gustan demasiado. La verdad es que me ha quedado un plato único genial (teniendo en cuenta que era hecho de “ropa vieja”)!

RECETA

Raciones: 4

Tiempo: 30 min (si tenéis que cocer las patatas y los guisantes) más 15min de nevera

Dificultad: fácil

 

INGREDIENTES

·         4 Patatas

·         75g de guisantes

·         5 salchichas tipo Frankfurt (yo cojo las que parecen auténticas en lugar de las de las grandes marcas comerciales)

·         La carne de un tomate pelado cortado a dados pequeños

·         Olivas al gusto (recomiendo que sean sin hueso. Yo puse  de las que llevan hueso y era incómodo de comer)

·         1 cebolla dulce picada (en mi caso he usado la variedad de Figueres)

·         4 ramas de cebollino picado

·         Mayonesa

·         Para decorar: una loncha de pavo y unas láminas finas de queso y vinagre balsámico de Módena.

PASOS

Yo ya tenía las patatas y los guisantes cocidos previamente. Si tenéis que empezar desde cero, recomiendo cocerlos al vapor junto a las salchichas.

Mientras, en un bol grande, ponemos la cebolla picada y el tomate a dados (escurrid antes el jugo para que no agüe la ensalada) con las olivas, el cebollino la mayonesa (cantidad al gusto). Cuando tengáis las patatas (cortadlas a trocitos), los guisantes y las salchichas cocidas, agregadlos a la mezcla. Removed bien y al frigo durante 15 minutos y ¡listo!

This is a summer recipe to waste resting food after cooking. I’ve changed a little bit the original recipe as I don’t like gherkins, mustard and capers. The truth is that the output is a great single course.

RECIPE

Servings: 4

Time: 30 min (if you need to cook potatoes and peas) and 15 extra minutes in the fridge

Difficulty: easy

 

INGREDIENTS

·         4 Potatoes

·         75g peas

·         5 sausages (type: Frankfurt)

·         1 ripe tomato chopped in small dices

·         Green pitted olives

·         1 sweet onion (chopped)

·         4 herbs of chive

·         Mayonnaise

·         To decorate: a slice of cold meat (turkey in my case) and some thin slices of cheese and balsamic Modena vinegar.

STEPS

When I prepared this salad, I already had the potatoes and the peas cooked. If you need to cook them, I suggest preparing them steamed with the sausages as well.

Meanwhile, in a big bowl, put the onion and the tomato (drain everything carefully as the water of the vegetables could spoil the mayonnaise) with the olives, the chive and the mayonnaise. When the potatoes, the peas and the sausages are ready, add them to the mixture. Remove carefully and duly and put the bowl in the fridge for 15 minutes and it will be ready to eat!

CANELONES DE PESCADO.FISH CANNELLONI




ESPAÑOL (ENGLISH UNDERNEATH)

En primer lugar, disculpad la presentación del plato: corté uno de los tres canelones para que se viera bien el relleno. Plato exquisito, quizá para una ocasión especial. Yo lo hice para Navidades. Es versátil y admite muchas opciones de pescado e incluso de marisco. Si tenéis invitados, es un acierto seguro. ¡Vamos allá!

RECETA

Tiempo: 1h 30min

Dificultad: media

INGREDIENTES

·         12 láminas de canelones (de los que no hay que cocer. Podéis usar los clásicos pero recomiendo éstos porque se gana tiempo y salen todos enteros y sin pegarse entre sí)

·         1 tomate maduro rallado

·         1 cebolla

·         Unas tiras de pimiento escalivado

·         2 dientes de ajo

·         1 vasito de vino blanco

·         Pescado: langostinos (6), rape (1 cola pequeña), merluza (1 rodanchas), salmón (1 rodancha) y lubina (1 pequeña)

·         Pan rallado

·         Perejil

·         Agua

·         Aceite

·         Sal

·         Pimienta negra

·         Queso rallado para gratinar

·         mantequilla

PASOS

En primer lugar, lavamos los vegetales crudos y los picamos por separado muy finos. Reservamos.

A continuación, limpiamos y quitamos las espinas del pescado (lo dejamos “sin trabajo”) y lo salpimentamos. Echamos un buen chorro de aceite en una sartén. Sofreímos la cebolla y reservamos. En el mismo aceite, salteamos el pescado con los dos dientes de ajo. Lo ponemos en una picadora junto a las tiras de pimiento a una marcha baja (no nos interesa que nos quede demasiado desmenuzado). Mientras, ponemos los canelones a reblandecerse en agua (leemos las instrucciones concretas del paquete que compremos porque los tiempos pueden variar). Los retiramos y los dejamos tapados en un paño húmedo.

Mezclamos el pescado con la cebolla en la sartén. A continuación, añadimos el pan rallado y el perejil y sofreímos un minuto. Echamos el vino y dejamos que lo absorba a fuego rápido. Bajamos el fuego y añadimos el tomate rallado. Dejamos que el tomate se integre y dé melosidad al pescado.

Ponemos a calentar el horno. Preparamos la bechamel como se indica en el enlace. Reservamos.

Enplatado y horneado: cogemos los platos donde vayamos a servir los canelones (aptos para horno). Yo recomiendo enplatar individualmente directamente porque queda mejor presentado y es más práctico. Cogemos las láminas de los canelones y les ponemos el relleno. Enrollamos. Echamos un pequeño chorrito de aceite en el fondo del plato para que no se pegue la pasta de los canelones al plato. Colocamos tres canalones en cada plato. Echamos la bechamel por encima. Espolvoreamos el queso por encima. Salpimentamos ligeramente. Colocamos unos pequeños fragmentos de mantequilla encima del queso y gratinamos.

First of all, I would like to say that I feel sorry for the presentation of this dish: I cut one of the cannelloni to show the filling and the output was quite disastrous.

This is an exquisite dish for special occasions. I prepared it for a Christmas dinner. It is versatile and it admits plenty of fish combinations. If you have guests, it’s a success. Ok, so let’s go!

RECIPE

Servings: 4

INGREDIENTS

·         12 cannelloni no-boil sheets (you can use other types of pasta but it will be more difficult and it will take more time to cook them)

·         1 ripe and grated tomato

·         1 onion

·         Some bands of smoky grilled bell pepper (pimiento escalibado)

·         2 garlic cloves

·         1 glass of medium bodied, fresh and fruity white wine

·         Fish: prawns (6), monkfish (1 small tail), hake (1 medallion), salmon (1 medallion) and bass (1 small unit)

·         Bread crumbs

·         Parsley

·         Water

·         Oil

·         Salt

·         Black pepper

·         Grated cheese to gratiné

·         Butter

STEPS

First, wash the vegetables and chop them very small separately. Leave them aside.

Next, wash, clean and peel the fish and pull up the fish bones (the output: fish “without work”). Season it with salt and pepper. Take a large saucepan and heat a little oil. Brown the onion and leave it aside. In the same oil, sauté all the fish after heating two crushed garlic cloves (later will be removed). Transfer the fish to a blender and add the bell pepper as well. Blend briefly. Meanwhile, put the cannelloni sheets into a big bowl with water to soften them (read the pasta instructions carefully and follow them as times between brand and brand may change). Remove them from water and place them covered with a wet cloth.

Mix fish with the onion in the saucepan. Next, add bread crumbs and parsley. Sauté for one minute. Sprinkle with white wine and allow it evaporate. Turn the heat down and add the grated tomato. Let it integrate with the mixture.

Heat the oven. Prepare the béchamel following the link above. Leave it aside.

Plating up and baking: take 4 plates to serve directly the cannelloni (make sure they are oven-resistant). I advise you to plate the cannelloni individually as you’ll be less exposed to troubles or mishaps. Take the cannelloni sheets and fill them with the mixture and roll them. At the bottom of the plate, add a little oil stream. Put three cannelloni in each plate. Cover them with béchamel and sprinkle the cheese on top. Season with salt and pepper slightly. Put little fragments of butter over the cheese and cook them au gratin.

Et voilà!

CREMA DE GUISANTES CON HUEVO POCHÉ Y PANCETA. PEA CREAM WITH POACHED EGG AND BACON




ESPAÑOL

Hace un par de navidades cociné un plato muy fino y delicado de crema de guisantes y huevo de codorniz aromatizado con un ramillete de hierbas y aceite perfumado con vainilla. Hará algunas semanas atrás me acordé y lo hice en una versión más simple (de entre semana) y como plato único. Me parece un plato viable y muy rico. Yo os presento la receta simple y rápida.

RECETA

Preparación: 1h
Dificultad: fácil
Raciones: 4

INGREDIENTES

·         5 o 6 patatas grandes

·         200g de guisantes

·         panceta

·         aceite de oliva virgen extra

·         sal al gusto

·         pimienta molida negra

·         para los huevos:  4 huevos, film transparente e hilo de cocina

 

    PASOS

Cogemos una olla y la ponemos a calentar con agua y un chorrito de aceite. Mientras, lavamos los guisantes, pelamos, lavamos y troceamos las patatas. Esperamos que el agua hierva y le añadimos los guisantes y las patatas. Dejamos que se cuezan hasta que las patatas estén blandas y se rompan. Añadimos sal y un buen chorro de aceite y lo trituramos en la batidora. Colamos y reservamos.

Mientras se cuecen las patatas y los guisantes, preparamos los huevos poché: ponemos a calentar agua en un cazo pequeño. Cogemos el film transparente y cortamos cuatro trozos (uno para cada huevo). Rompemos la cáscara de un huevo y lo depositamos encima del film. Rápidamente para que no se esparza el huevo fuera del film, cogemos las cuatro puntas y hacemos un saquito con éste. Anudamos las puntas con hilo de cocina y nos cercioramos que nos haga un cierre hermético, sin fugas. Repetimos el mismo procedimiento con los otros tres huevos. Cuando el agua hierva, ponemos los huevos en el cazo y los dejamos cocer cuatro minutos. Transcurrido este tiempo, apagamos el fuego y dejamos enfriar los huevos. Retiramos el plástico de los huevos y el hilo y los salpimentamos al gusto. Reservamos.

Cogemos una sartén pequeña y freímos en su propia grasa la panceta hasta que quede crujiente. Apagamos el fuego y la desgrasamos con papel de cocina.

Enplatado: en un plato fondo colocamos un par de cazos de la crema de patata y guisante. A continuación colocamos con esmero el huevo pochado y la panceta. Terminamos el plato con un chorrito delgado de aceite de oliva para dar sabor a la crema.

Some weeks ago, I remembered a dish I prepared a couple of New Year’s Eve ago that was really delicate and soft: potato and pea cream with quail egg aromatized with an herb bouquet and vanilla oil. However, this second time, as it was a non-festive day I made it simpler and as a single course. In my opinion, this dish tastes excellent and it’s not expensive. Here it goes:

Recipe

Preparation: 1h
Difficulty: easy
Servings: 4


Ingredients

 ·         5 o 6 big potatoes

·         200g peas

·         bacon

·         extra virgin olive oil

·         salt

·         black powdered pepper

·         for the eggs:  4 eggs, clingfilm and kitchen string

    

STEPS

Put some water in a pot. Add an oil stream. Meanwhile, wash the peas and peel off, wash and chop the potatoes. When the water boils, add the peas and the potatoes. Let them boil until the potatoes are soft and easy breakable. Add salt and quite a good stream of oil and blend it completely. Then, strain the mix. Leave it aside.

While the peas and the potatoes are boiling, prepare the poached eggs. Put some water to heat in a small pot. Take the clingfilm and cut four portions (one for each egg). Break an egg and put the egg on the clingfilm. Then, pull up the edges of the clingfilm and tie them with the kitchen string. Make sure it is hermetic and there is no possibility of egg escape. Repeat the same process with the other 3 eggs. When the water boils, place the egg bags in the pot and boil them for four minutes. Next, remove the film from the egg as well as the kitchen string and add salt and pepper to the eggs. Leave them aside.

Take a small pan and fry (without oil or any other shortener) the bacon until it gets crunchy. Remove the excess of fat with kitchen paper.

Plating up: put some pea cream in a soup dish. Add on it the poached egg and the bacon. Add a small stream of oil over the cream to reinforce its taste.

Enjoy the meal!
